Scottish Recipes and other Fixin's
“HAGGIS” WITH A TEXAS TWIST

2 cups “pin head” oats
toast in  shallow pan at 350 degree oven until light brown.

2 large onions chopped and cooked with:
1 lb. Ground round or hamburger meat -
cooked until well done and in crumbles.

½ lb. Cooked Beef liver, ground
½ lb. Cooked Tongue, ground

Mix all meat together in a bowl. Add toasted oatmeal.
Stir all together, should have a bowl of crumbles.

Add:
1 teaspoon salt
1 Tablespoon Black Pepper
½ teaspoon cayenne

Mix all ingredients together and pour into two loaf pans.
Over each loaf pan pour 1 cup beef broth.

Wrap each loaf with Foil, leaving a tented top, and place
350 degree preheated oven for 2 hours.

Oats were once the staple of the Scots diet.
This is my version of a good meal of oats.

OAT MEAL MUFFINS

Calories 175 each
Makes 24 muffins
Bake at 400 degrees

Mix together:
1 ½ cup Quaker Oats
1 ½ cup Oat Bran
1 cup whole wheat flour
½ cup Brown Sugar
4 teaspoons baking powder
1 teaspoon salt
2 teaspoons cinnamon

In Separate Bowl
½ cup skim milk
1 cup apple juice
2 eggs
4 tablespoons sunflower or substitute oil
4 tablespoons honey

Mix both mixtures well - Combine together and mix again.

Add 2 cups diced apples (about 2 large apples) IMPORTANT DO NOT
FORGET APPLES AS THEY ARE A LARGE PART OF THE MOISTURE

Optional Additions (including all for the 175 calories)

1 cup raisins,    1 cup dates,    1 cup coconut,    1 cup nuts, chopped

If coconut or dates have sugar you may want to cut down on the brown sugar.

Dip batter into greased muffin tins and bake 400 degrees about 25-30
minutes. You  may use muffin papers, spray lightly with oil spray. These
muffins are very good and healthy. One muffin will keep your energy level up
until noon. We slice and toast them for breakfast. If you have them with cream
cheese, butter and preserves, of course they will have more calories. ( I know
you thought they wouldn’t)


OATMEAL COOKIES

3/4 cup shortening (solid)                        1 cup flour
1 cup brown sugar                                1 teaspoon salt
1/2 cup white sugar                                1/2 teaspoon soda
1 egg                                                1/4 cup water
1 teaspoon vanilla                                3 cups oats(quick cooking)

Blend shortening, sugar, egg, water and vanilla.

Blend together flour, soda, salt and oats.

Mix flour blend into the shortening/sugar blend. Drop by spoonfuls onto a
well greased cookie sheet. Bake at 350 degrees for 12 to 15 minutes.


OATMEAL SPICE RAISIN COOKIES

Add to the recipe above:
1 cup raisins
1 teaspoon cinnamon
1/2 teaspoon nutmeg        
1 cup pecans or other nuts if desired

Bake as above.

I used to make these cookies when the kids were little and they didn't
last very long.

Remember shortening makes a soft cookie.
Butter makes a crisp or flat cookie.                                


RAW APPLE CAKE

2 cups apples, peeled and diced
1 cup sugar

Mix apples and sugar and set aside for 12 hour to bring out the juice in apples.

1/4 cup oil                                        1 egg, beaten
1 cup flour                                        1 teaspoon baking powder
pinch soda                                        1 teaspoon cinnamon
1 teaspoon vanilla                                1/4 teaspoon salt
1/2 to 1 cup nuts, chopped

Add oil and egg to apples with their juice. Sift flour, soda, cinnamon and salt.
Add to oil, egg and apple mixture. Add nuts and vanilla.  Bake at 375 degrees
for 25 to 30 minutes. Old family recipe from Flora Mackay Widener.


ISABELLA  MacKAY'S  VINEGAR  CHEESE

In a Stainless Steel pan heat 1 Gallon of milk to 180 - 190 degrees
Stir often or constantly.

Remove from heat and Add 1/4 to 1/2 cup white vinegar
Stir- Curds will start to form. Let set for about 5 minutes
1/4 cup vinegar works well for a softer cheese.
For cheese a little firmer use 1/2 cup vinegar.

Sit for 5 minutes. Pour through Cheese Cloth (very Fine).

Hang to drip.  1 or 2 hours or lay cloth over colander
and let drain through the cloth into the sink.

Sometimes it takes only a few minutes. Left too long the cheese will be
too dry. Cheese can be rolled in cloth or plastic wrap and refrigerated
until cold. Slice and eat.


For HERB CHEESE

Add to vinegar before pouring into hot milk - thyme, tarragon, garlic, chili
powder etc. For Herbal Cheese it will impart flavor of the Herb or seasoning
added.
